After one hugely successful restaurant on Salt Lake City’s downtown Main Street, Charlie Perry wanted more. Harkening back to his great grandmother's love of butter and carbs, and leveraging the family's nationally-recognized organic millled flour, which is sprouted from heritage seeds that are nearly 50 years old; Charlie wanted to open a neighborhood boulangerie. And with stringent French standards, Eva’s Bakery was born - it was an instant success. I was lucky enough to help them from the very beginning.
